Ahh… spring is upon us officially now and so is Little Bug’s new found love of dirt. It starts first thing in the morning when she points out the window and repeats “dirt” over and over again. She could sit outside with her dirt filled planting pots and toddler sized spade for hours! The joys of being little.
I wanted to transform her fascination with dirt into a special dessert for us to enjoy. I unearthed our push up pop containers during the move and have been brainstorming some fun new dessert ideas to use them with. Remembering the joys of dirt cake from my childhood, I thought these dirt cake push up pops would be a perfect springtime dessert for everyone to enjoy. I put a little twist on the traditional dirt cake and am using crumbled chocolate cake instead of Oreos.
You Will Need:
1 set of 10 push up pop containers
1 chocolate cake mix – baked 2 nine inch cake pans – you will use only one cake
1 four ounce package of cream cheese
1/4 cup of butter
1/2 cup of confectioner’s sugar
1/2 teaspoon of vanilla
1 1/2 cups of milk
1 packages of instant vanilla pudding mix
Six ounces of frozen whipped topping – thawed
Gummy Worms or other candy embellishments
1. Bake your chocolate cake mix according to your directions. Let cool.
After the cake is completely cooled, crumble one of the nine inch round cakes into small pieces in a bowl.
2. Make your pudding filling. Beat together cream cheese, butter, sugar and vanilla until light and fluffy. In another bowl, whisk together milk and pudding mix to make a thick mixture.
Fold in the whipped topping. Add the pudding mixture to the cream cheese mixture.
3. For the first layer, fill a third of the push up pop container with crumbled chocolate cake. Press down the chocolate cake into the bottom of the push up pop container to help compact it. Add about 2 tablespoons of pudding filling to make the middle layer. Then, top with more chocolate cake for the final layer. Each push up pop should have three layers of dessert.
As you fill your push up pop containers, don’t worry if you get splatters on the containers. Simply wipe off with a paper towel as you go.
Put in your gummy worm before you have finished adding the last chocolate cake. Add some more chocolate cake around your gummy worm to help it stay in place. Top with the plastic cap to keep the cake and pudding fresh.
4. Refrigerate your push up pops until chilled.
Serve as a yummy springtime dessert.
One last tip – if you don’t want to top with a gummy worm (I found toddlers a little fickle about gummy candy), add a strawberry, chocolate flowers or chocolate stones to the top.
Little Bug loved digging into these springtime treats. What a fun way to celebrate the arrival of a new season!
